Nose: chocolate pudding, brown sugar, apricot, malt balls, leather, damp soil

Palate: honey and milk chocolate initially greet you, followed quickly by apricot, peach and wet grain, the mid palate has a soft leather and petrichor feel to it before giving way once again to stone fruit and sweetness

Finish: medium to long finish of leather and honeyed apricot

Rating: Hoard it (Out of Hoard, Buy, Try, Pass)

Thoughts: This is such a great example of why grain is important in whiskey. The apricot and leather are a somewhat classic note for single malt, but this never feels abrasive like a lot of single malts do. The more chocolate forward aspects help to round it out and make it very dessert like as well. It just feels fresh, sweet, and keeps begging you to go back for more.

What's the Deal?: Root Shoot whiskey/spirits is the definition of grain to glass. Starting on the 5th generation Olander farm, Root Shoot has been growing grain for over a century. What makes them extra special, is that they subscribe to Regenerative farming practices, which means tending to the Earth and plating crops carefully to ensure they avoid barren earth. Their care for grain has made them highly desirable for the Colorado whiskey and beer scene. Due to that popularity, Root Shoot decided to make their own malting process to have even more ownership of the grain. Shortly after, they decided to take it a step further and have different Colorado distilleries distill their grain for them to make their own whiskey. This particular run is American Single Malt distilled by Vapor Distillery/Boulder Spirits. The result? A wildly high quality spirit that started as the highest quality in the ground.
