Nose: red apple skin, caramel syrup, milk chocolate, cardamom, hibiscus florality, dried dates, cedar


Palate: the nose follows through to the palate but really ramps up the milk chocolate notes, it adds in some earthiness akin to the Laws backbone, it's an almost grain like note that shows odd the terroir of where the grain was sourced, some dry forest like notes round it all out


Finish: medium length finish with milk chocolate, apple, and earthiness


Rating: I won't rate what I've picked (Out of Hoard, Buy, Try, Pass)


Thoughts: This is a perfect fall pour. The apple is definitely present, but does not overpower or even become a main note despite being finished for two years. The rye still shines perfectly, but has a nice apple note strewn throughout. I wish that this wasn't proofed down quite as far, and sat around 110-115, but at the same time, this is a wildly approachable pour. For something that is being split with the distillery tasting room, this will absolutely be a crowd pleaser. I'm so ready for a crisp Fall night and a fat pour from this.
